Cooking Chicken

We’ve been cooking a lot of chicken products, lately, and they’ve all been really delicious!

Melissa prepared wonderful Italian Seasoned Chicken Club Sandwiches with bacon, lettuce and tomatoes:

Topped with ranch dressing, this sandwich was scrumptious.

Melissa makes really amazing Chicken Tenders:

I made a side dish to accompany that delicious entree. I often don’t exactly know what I’m going to cook until I do. So this time, I started with onions:

Added some button mushrooms:

And finally sauteed some spinach with the other ingredients. It ended up being pretty tasty!

I also enjoy cooking with eggs. I especially like making “Deluxe” Scrambled Eggs. Or basically a Scrambled Omelette. This one had bacon, peppers, onions, mushrooms, and various herbs and seasonings:

But lest you think we only cook chicken (or chicken products), I must include this picture of some savory beef stew that we prepared in our crock pot. Also, Melissa took a risk and prepared this dish entirely without a recipe!

That is an interesting note on our individual cooking styles, though. While I much prefer to cook without recipes, and improvi-cook by throwing things together without really knowing entirely where I’m going (though I have somewhat of an idea), Melissa enjoys using recipes handed down from others (who’ve tried it before), then tweaking them in her own way. Which is probably why her dishes always turn out well, and mine only sometimes do… And why she can bake delicious pies and bread, and why I can’t even bake a cake well… but that’s a story for another day.
